Ingredients
8oz softened butter
8oz caster sugar
4 large eggs
10oz self raising flour
2 tbsp milk
Rind of 1Orange-grated
100g blueberries
Method
Place the butter, sugar, eggs, flour, milk and orange zest into a mixing bowl and beat until pale and creamy add the blueberries
spoon into a lined small 8”-12” roasting tin and level the surface.
Bake in the Everhot oven set at 190c in the centre of the oven
Approx 30 mins baking time
On removing from the oven sprinkle with 2oz granulated sugar and the juice if the orange
